The traditional balsamic vinegar is a sublime elixir obtained with the ancient recipe handed down from generation to generation. From the grapes of grasparossa and trebbiano of the Modena hills, the must of this ancient product is obtained. The latter is cooked in the open air for hours until it reaches the babo gradation necessary for placing in the first barrel. From here begins a series of rackings (one per year) within the barrels that make up the "battery" and reached the aging of 12 years only a few liters of this nectar are taken. The vinegar is thus brought into a consortium for the tasting and certification of this amazing product.
