BLACK GARLIC OF VOGHIERA
Nero di Voghiera is a fermented black garlic produced from Voghiera D.O.P. garlic, synonymous with quality but also with exceptional sweetness. Thanks to the long, entirely natural fermentation, based only on the permanence of the bulbs at controlled temperature and humidity, the bulbs darken, abandoning their whiteness and becoming elegant for our palate. Indeed, the fermentation process transforms the intense aroma into a softer and more delicate flavor, makes the consistency of the wedges more tender and improves their digestibility.
NeroFermento proposes itself as an Innovative Company in the field of development and
marketing of fermented agricultural products to be consumed both in the culinary field and for
health purposes. The strength of the company is to combine quality agriculture and research
technology by managing the entire process internally, directly or indirectly
productive. NeroFermento develops and implements the technology and the production process all at
own internal and since December 2017 it has three fermenters, each with a capacity
production of 2000 kg per cycle.
The technology includes the development of software and ad hoc sensors that allow you to have
constant and complete control of the fermentation process. The production cycle, characterized
from a natural maturation process in an environment with controlled temperature and humidity, ha
a duration of about 60 days.
